The Starter Session
our first one, and a very good messIn June we filled a Melbourne kitchen with fifteen bakers, a lot of flour, and enough sourdough starter to keep the city going. Here's how it went.
How the day ran
Dough doesn't hurry, so neither did we.
Arrive
Coffee, introductions, and a jar of live starter with everyone's name on it.
Watch first
Feeding, autolyse and mixing by hand. Not a stand mixer in the room.
Everyone in
Fifteen people mixing at once. Flour everywhere within about four minutes.
Clean up properly
The sink got more attention than we expected. Turns out nobody had seen dough come off that fast.
While it proved
Bread, coffee, and a long chat about how Dissolve My Dough started.
Shape and score
Bench rest, shaping, banneton, and fifteen first attempts at a scoring pattern.
Warm bread
Loaves out of the oven, torn apart, far too much butter.
Home time
Bags, a group photo, and everyone out before their starter got hungry.
